Covalle Tomato-Water Gin was developed in 2024, but it was inspired by collective experiences and inspirations. Potluck dinners featuring in-season tomatoes, the aromas of gardens and greenhouses, dreams of a life in a charming beach town, romantic martini bars, and the familiarity of a gin and tonic on a back porch—they all play a part in making Covalle a spirit we are incredibly proud to produce.

Covalle came from imagination and experimentation, yet it somehow feels deeply familiar. It took an immense amount of work to bring to life, yet it seems as though it has always existed. It sits along a sunny coast, “world famous” for its tomatoes, as well as for its boardwalk oyster bars, lively pier, and sun-drenched beach clubs dotted with volcanic outcroppings.

Covalle Tomato-Water Gin is a one-step way to elevate a martini. Though the gin is increasingly recognized at cocktail bars, the town of Covalle is a casual place.

At the bar on the boardwalk, the house martini is a “50/50”, which has a slightly lower proof and brings out more of the “tomato” flavor.

They stir up a recipe of:

2 parts Covalle Tomato-Water Gin

1 part “blanc” vermouth

1 part “dry” vermouth

garnished with 1 olive and a lemon twist

Winter Tomato Stew

Like most beach towns, Covalle is busiest in the summer, but the town has plenty of traditions in the other seasons as well. Each year, as the frost begins and tomato availability shifts from deliciously fresh to expertly preserved, the town holds a competition to name the “Tomato Stew of the Year.”
